Znali netko recept za baklavu sa pistacijama koju prave u Turskoj, zarolanu....ostala mi je u sjecanju kao neprikosnovena... 33.gif

Ovaj put ce da bude malo skromnije nego zadnji put. Bice govedja supa, pecena janjetina sa krompirima, japrak, pogaca, salata, baklava, tufahije, i moja mala porodica na okupu. Dosta da se lijepo obiljezi praznik. 33.gif

Uh vise mi je trpeza preko glave, ovaj decembar mjesec sve zaredo ....

Vako pileca supa, pecena teletina i krompir preliven pavlakom i kajmakom pecen u rerni i salata a za dezert cu uzet arapske baklave i napravit neki kolacic i kapak.

Glumka, ja tirit pravim od oka:

dva zumanca (zumanjka, kako li se kaze)

po potrebi brasna da tijesto bude dobro tvrdo, ko ako znas ko za tarhanu (ili tahranu 14.gif ) moze i kapca mlake vode, po potrebi.

Onda to tijesto ostavim da malo odstoji, zatim ga izirendam na krupnu irendu. Mozes i dobro rastrati medju rukama, po potrebi umakati ruke u brasno. Tako izmrvljen tirit ostavi da se malo suhne i zatim ga prevrni na rastopljenom puteru.

Ja volim tirit staviti samo na jedan red, negdje u sredini baklave. Cini mi se da cuva zaljev i da zahvaljujuci tiritu baklava cuva dugo vlaznost i mehkocu.

Odlican recept za tirit je u Lakisicevom kuharu,nemam ga ovdje vec u BiH, ako neko od raje ima mozda moze pogledati...

Kupovne, ima ovdje jedan bazar gdje drze arapsku slasticarnu i njihove baklave su sa pistacijem i meni se cini orasima pravo su dobre

sjetih se jednom ovdje bio ja u jednoj takvoj prodavnici, i vidim neke dvije "nase" zene se prepiru sa prodavacem, prvo se odusevile sto su ugledale baklavu u prodavnici, a onda ga ubjedjuju da to nije "prava" baklava.... 04.gif 13.gif

ja licno sa veliki pitojedac 07.gif a jedna od pita koju narocito volim je ova


TIRIT PITA

Potrebno: ½ kg jufke, ½ kg kokošijeg mesa bez kosti, 20 dkg tirita, 20 dkg masla, kokošija supa, ½ l kiselog mlijeka, so, biber.

Priprema: Napravite tirit od 15 dkg brašna, 1 jajeta, 1 dcl slatkog mlijeka, masla.

Braašno pospite po dasci. Jaje i mlijeko umutite i time poprskajte brašno, a zatim trljajte da biste dobili mrvice tj. tirit.

Meso skuhajte u slanoj vodi. Izvadite ga i izrežite na komadiæe. Na dijelu masnoæe popržite tirit, a preostalu masnoæu otopite. Pomastite tepsiju, poredajte par jufki koje st posuli otopljenom masnoæom. Na sljedeæu jufku stavite pola mesa i pola tirita. Pobiberite. Opet poredajte nekoliko jufki i svaku pomastite. Na sljedeæu stavite ostatak mesa i tirita i pobiberite. Pitu završite dvijema jufkama. Pecite. Kada je pita gotova, isjecite je na komade pa zalijte supom.

Ovu pitu možete zaliti kiselim mlijekom i vrelim maslacem.


samo ovdje se nigdje ne spominje da se jufke malo zapeku dali u rerni ili na plati (peci na cvrsto gorivo) mah prste da pojede covjek...vidim ja sta vidim haman niko od herki nije ni cuo za ovu pituljicu 07.gif

Pleska, jufke se zapeku na plati, moze na kolu od elektricnog spareta.


Moji ukucani isto vole tu pitu. Tako zapecenu jufku najbolje je sijeci i umakati u kokosiju juhu. Znaci mozes skuhati kokos, iscoptiti je, u tu vodu umakati jufke i pecenu zaliti kiselinom i saransakom, bude ko buredzici. Inace, po receptu ne ide saransak.

I moj muz jutros kaze, zeno nista bez pite i sarme 02.gif

da bas tako behar
samo da neko pogresno shvati ono oko umakanja.dakle posto se jufka zapece bude u pravom smislu kao "kora" i da dobije na svjezini zato je to potrebno da se uradi.
drugo moja majka je obicno zaljevalja tu pitu sa ostatkom"vodene supe" u kojoj se je predhodno pile skuhalo.mislim da nedustaje jos da se naglasi da se u posudu sa piletom doda crveni luk i biber odprilike isto kao i za pripremu bureka 01.gif

eto meni ta pita nedostaje,i jos ponesto... 01.gif
